The sandwiches that trundle forth from this tiny Trinity Bellwoods shop are flavourful marvels that honour the humble pig. For the house specialty, a marinated-in-spices pork shoulder is wrapped in cured pork belly and then slow-cooked, bundled up in a prosciutto blanket and tucked into a soft sourdough hug from Caldense Bakery across the street. An assortment of toppings — like seedy mustard, tangy truffle sauce and mushrooms — accent perfection. All is built to splendid order in front of customers’ delighted eyes. In the summer, soft-shelled crab is added to the mix. Sides are roasted potato, rapini and baked beans.
